Crunchy, Tangy Cucumber, Lime & Sesame Salad

by | Nov 11, 2022 | Disaccharide Free, Lactose Free, Maltose Free, Recipes, Sucrose Free | 0 comments

This salad is light, crunchy and tangy, the oil gives it more calories and a delicious taste, but more importantly it’s completely disaccharide free. There’s zero Sucrose, Zero Maltose and Zero Lactose, although it can be turned into a meal by adding a cheese like Haloumi (which would have some Lactose), or boiled eggs (to increase the protein and keep it dissacharide free), or can be used as a snack or side. It’s a fantastic re-hydrating option and has lots of electrolytes in the lime juice and the salt. The cucumber also has plenty of fibre and water.

This recipe is so crunchy and tangy, be sure to try it out with varying amounts of lime juice:salt ratios – when you get it just right the sourness of the lime disappears and the harshness of the salt also evaporates.

Optionally you can add the sesame seeds and chilli flakes, personally I usually skip both of these as I don’t always have them on hand, and I’m not one for spicy food – but if you enjoy these things they are amazing together. Absolutely go for the toasted sesame oil and toasted sesame seeds though – the taste is just infinitely better!!!

Ingredients

  • 1/3 Telegraph Cucumber You can use any kind of cucumber
  • 1/2 tsp Iodised Salt You can just add salt to taste
  • 2 tbsp Lime Juice Fresh is the best taste, but check bottles to make sure there's no additives
  • 1 tbsp Sesame Oil Toasted is the *best* flavour
  • 1 tsp Toasted sesame seeds optional
  • Finely chopped fresh/frozen chilli – to taste optional (I never add this)

Equipment

  • 1 Sharp Knife
  • 1 Bowl
  • 1 Table Spoon Measure (you don't really need to measure, just wing it to taste)

Method

  1. Chop the cucumber in to smaller pieces, and add to a bowl. Coins, long thin slices, or cubes are all great options
  2. Add the lime juice, then salt, then sesame oil and mix together. Alternatively mix the dressing in a separate bowl then pour on top.
  3. Add any of the optional toppings and enjoy
